The Olympic Village Double Chocolate Muffins have taken the internet by storm with their rich and indulgent flavour that is perfect for any chocolate lover.
These muffins have gained popularity for their double dose of chocolate in every bite, making them a favourite treat for many olympians.
Whether you are a fan of the Olympics or simply enjoy a delicious chocolatey snack, give these a try you wont be disappointed.
Preparation Time: 10 minutes
Baking Time: 15 minutes
Makes: 14 muffins
Ingredients for cupcakes
250g self raising flour
200g caster sugar
42g cocoa powder
200g dark chocolate chopped into chunks (or use choc chips)
100g milk chocolate chopped into chunks (or use choc chips)
2 large eggs
120ml vegetable oil
120ml milk
185g of plain yogurt (or sour cream)
1 teaspoons vanilla extract
Ingredients for Ganache
200g milk chocolate
100mls of double cream
(or use chocolate spread instead of making your own ganache)
Method
Preheat oven to 180°C.
Line 2 muffin tins with 14 cupcake/muffin liners.
Mix the dry ingredients (flour, sugar, cocoa powder, and chocolate chunks or chips) together in a mixing bowl.
Mix the eggs, yoghurt or sour cream, milk, vegetable oil and vanilla extract together in another bowl.
Combine the wet and dry ingredients together and mix with a spoon or spatula until fully mixed.
Spoon the batter into the cupcake liners (I use an ice cream scoop to get equal spoonfuls of mixture into each case)
Bake for 15 minutes or until a skewer comes out of the muffin clean. Note you make get melted chocolate from the chunks on your skewer, this is fine.
Allow to cool on a wire rack.
To make ganache
Break up chocolate or use chips and place in a heatproof bowl.
Heat double cream until at boiling point then pour over chocolate.
Mix until a smooth consistency (if there are still lumps, heat in microwave in 10 sec bursts until choc has fully melted)
Allow ganache to cool then fill a piping bag with the chocolate ganache (or you could you chocolate spread) and squeeze a small amount into the centre of each muffin.
If you don't have a piping bag then just pour over the top of each muffin
Enjoy.
Can be stored for 3-4 days in an airtight container or frozen for up to 3 months if they last that long!!!!
