Easy Pancake Recipe


Yey it's Pancake Tuesday!! Who doesn't like a pancake? I don't think you can't beat a nice simple pancake with freshly squeezed lemon and a sprinkling of sugar for breakfast, lunch or supper.

Whether you are a savoury fan or a lover of all things sweet and sticky I have the easiest fail-safe pancake recipe for you to try. So get that frying pan and and get flipping!

Ingredients (makes approx 12 pancakes)

100g plain flour

2 large eggs

300ml milk

1 tbsp sunflower oil ( or oil of your choice)

Plus a little more oil for frying

Method

  1. Put flour, eggs, milk and oil into a large jug (or bowl if you don’t have a jug) and whisk until you have a nice smooth batter.

  2. Heat a medium sized non-stick frying pan over a medium heat and wipe it with some oiled kitchen roll.

  3. When the pan is hot (test it by pouring a tiny amount of batter in and seeing if it cooks) pour in around a ladle full of batter and cook for approximately 1 minute, turn over with a spatula or flip if you're feeling brave and cook for a further minute. Put on a warm plate and you're ready to serve with whatever topping you desire.

  4. Enjoy

Once cold the pancakes can be layered up with parchment paper in between, wrapped in clingfilm and kept in a fridge until ready to serve. They could also be frozen for up to 2 months.

Blueberry and maple syrup

Spicy beans

Garlic mushroom and feta
